Sustainability is a central issue in food business and food retailing since approximately 3 years (See Teitscheid 2011). Various influential factors are significant for this development. On the one hand consumers choices are changing (See GFK et al. 2009). They are looking for natural, good and healthy food; they have a longing for home and an intact world (See iSuN 2010). The image of a highly efficient, but often ruthless industrial food production in regards to mankind and nature is not appropriate here. On the other hand, raw materials are scarce and, thus, very valuable. Bad harvests, mostly interpreted as a result of climate change, worldwide increasing consumption and the production of food in favor of energy production instead of nutritional aims, lead to a re-evaluation of agricultural resources and their producers. Within this context, food industry is searching for new forms of cooperation and partnership along the value chain in order to secure their resource basis. In the light of their significant environmental impact, an increasing number of companies also start to work on the environmental assessment and optimization of their products and value chains. Therefore they need employees with valid knowledge and competencies in sustainability and resources management. Based on this demand, the master's program "Sustainable Services and Nutrition Management" started in 2009 in the University of Applied Sciences in Münster (Germany)1. This text reports about how the topic of resource efficiency in food/nutrition industry has been integrated within the study program, which projects have been worked on and what experience could be gained from them.
Um die Leitidee einer nachhaltigen Entwicklung strukturell in der Arbeits- und Berufswelt zu verankern,
müssen entsprechende Kompetenzen identifiziert und konkretisiert werden, die im Rahmen der Berufsbildung zu fördern sind. In diesem Beitrag wird ein Modell zur Strukturierung und Beschreibung nachhaltigkeitsbezogener Kompetenzen im Lebensmittelhandwerk und der Lebensmittelindustrie vorgestellt. Das Modell stellt die Dimensionen beruflicher Handlungskompetenz (Sach-, Sozial- und Selbstkompetenz) auf drei Ebenen dar: bezogen auf Entscheidungen, die (1) im Arbeitsprozess, (2) auf Unternehmens- und (3) auf politischer bzw. gesellschaftlicher Ebene getroffen werden. Die 15 nachhaltigkeitsbezogenen
Themenfelder des Modells sind jeweils hinterlegt mit Kompetenzzielen, welche Impulse für die curriculare und didaktische Berufsbildungsarbeit setzen können.
Das vorliegende Kompetenzmodell zur Berufsbildung für nachhaltige Entwicklung (BBNE) in Lebensmittelhandwerk und Lebensmittelindustrie enthält eine Kompetenzmatrix, deren Felder der Strukturierung dienen, welche nicht isoliert, sondern in ihrem Gesamtzusammenhang zu betrachten sind.
Ergänzt wird diese Matrix durch nachhaltigkeitsrelevante Kernkompetenzen sowie dazugehörige Kompetenzziele.
In order to anchor the guiding idea of sustainable development in vocational education and training structurally corresponding competences must be identified and
taught within the framework of vocational education and training (VET).
This presentation presents the idea behind VET and a model for describing sustainability-related competences in food processing professions.
The workbook consists of a total of three modules built on each other. The module contents help employees in bakeries to deal with the topic of sustainability.
The topic of digitalisation is addressed in the context of merchandise management and sustainability and specifically how returned bakery products can be reduced using digital prediction tools. These modules take into account the day-to-day processes and challenges in the bakery trade and develop practical solutions.
Das Arbeitsbuch besteht aus insgesamt drei aufeinander aufgebauten Modulen. Die Modulinhalte helfen Beschäftigten in Bäckereien sich mit dem Thema Nachhaltigkeit auseinanderzusetzen. Es wird das Thema Digitalisierung im Kontext der Warenwirtschaft und Nachhaltigkeit aufgegriffen und speziell darauf eingegangen, wie sich Retouren mittels digitaler Vorhersagetools reduzieren lassen. In den vorliegenden Modulen werden die tagtäglichen Prozesse und Herausforderungen im Bäckerhandwerk berücksichtigt und praxisnahe Lösungen erarbeitet.
Ob Nachhaltigkeit zum selbstverständlichen Bestandteil der Ausbildung wird, hängt vor allem
vom Engagement und der Qualifikation des Berufsbildungspersonals ab. Denn als Fachleute kennen Ausbilderinnen und Ausbilder die beruflichen Tätigkeiten und betrieblichen Prozesse, und als Pädagoginnen und Pädagogen sind sie es, die Lernsituationen gestalten und Lerninhalte vermitteln. Vor diesem Hintergrund richtet sich der vorliegende Leitfaden insbesondere an das betriebli-
che und überbetriebliche Ausbildungspersonal, aber auch an Lehrkräfte in Berufsschulen. Er zeigt
auf, wie nachhaltigkeitsbezogene Lehr-/Lernarrangements entwickelt und umgesetzt werden können. Mit Blick auf die lebensmittelproduzierenden Berufe werden dem Ausbildungspersonal Tipps zur Gestaltung entsprechender Lernaufgaben und damit zur betrieblichen Umsetzung der
Standardberufsbildposition gegeben.
Welche Umweltbelastungen verursacht der Betrieb? Wie lässt sich Nachhaltigkeit im betrieblichen Handeln stärker verankern und wie können etwaige Zielkonflikte konstruktiv thematisiert
werden? Ausbilderinnen und Ausbilder müssen sich heute darauf einlassen, diese komplexen und zum Teil auch unbequemen Fragen gemeinsam mit den Auszubildenden zu diskutieren. Dieser Leitfaden gibt hierzu ein Rüstzeug an die Hand, mit dem eine nachhaltigkeitsorientierte didaktische Berufsbildungsarbeit in Betrieb und Schule sofort und ganz konkret umgesetzt werden kann.
Food-processing companies are controlled by societal influences and economic interests, but their efforts with regard to reducing food loss and waste are very different. This qualitative study aims to identify basic recommendations of good practice for the food-processing industry in order to prevent and handle food loss and waste. For this purpose, a comprehensive literature review was conducted in the field of food waste prevention and data was collected from thirteen German companies. The findings summarize the recommendations of good practice, which cover the entire supply chain from supplier to consumer and beyond. The analysis showed that the participating companies are already partially aware of operational measures, even if they are applied or mentioned without a systematic approach. Furthermore, the analysis revealed that most activities relate to internal matters, like processing, employees and utilization. However, the responsibility of foodprocessing companies does not end with internal processes to reduce food waste. The results show that some companies are already aware of their responsibility to be involved along the entire supply chain. Finally, the results show that the needs of consumers and suppliers must also be considered in order to reduce food waste, in addition to direct reduction measures. This paper highlights nine important stages and 53 basic recommendations for companies to address food loss and waste in order to improve their practices.
